For years, Library patrons have requested additional dining options in Mitchell Memorial Library. During Summer of 2025, two new areas will be constructed to house an expanded Einstein Bros Bagels and a new Maroon Market. Officials said these changes will provide students, faculty and staff with more dining options on this southeast side of the quad and a place to grab a quick snack.
Einstein’s will move from its current location to the Research Instruction and Outreach area also located on the 2nd floor of Mitchell Memorial Library. With the move and expansion, Einstein will offer a larger menu, and a larger communal dining space for students. The Maroon Market will be added to the Computer Commons area, also located on the second floor and will feature self-checkout for a convenient grab and go experience.
